A plant that is rich in flavor and history, Monstrueux de Viroflay spinach was first discovered in parts of Northern Asia and was introduced to the French with in that same century. Catherine de Medici then popularized the plant in the Renaissance era and finally was first marketed in the small French town of Viroflay. The plant was known to be abnormally large which lends itself to the name Monstrueux de Viroflay which translates to the monster of Viroflay. Crunchy, flavorful and gigantic, Monstrueux de Viroflay spinach will work well in any salad or as a topping. This spinach should be ready to harvest within 7 weeks. Some possible recipes that use this type of spinach are Strata with Ham, Gruyere and Spinach and Soufleed Spinach Omelet.
